Conde Nast Traveller UK|March 2016WORLD ON A PLATETHIS MONTH’S RECIPETo make Middle Eastern spicy roast carrots with feta, first fry a tablespoon of cumin seeds lightly until just fragrant. Take them off the heat and pound to a rough paste with twice as many coriander seeds, a pinch of salt and a couple of cloves of garlic. Then mix the paste into a slug of olive oil, the juice of a lemon and a teaspoon of sugar. Scrub the carrots well, then slice lengthways or keep whole if very small. Put all the ingredients into a bowl and mix in the carrots, massaging them well. Spread out in a roasting tray and roast at 180˚C for 30-45 minutes or until tender and caramelised. Within just a couple of seasons, the mood might shift decisively along one axis or another: opulent/austere, gaudy/grave, militaristic/mumsy.
